Weeknight Dinners


Fry spinach, bell peppers, mushrooms, or jalapenos. Place the fried veggies in a tortilla with a mild cheese or pepper-jack, and season with salt and paprika/red pepper flakes. Then fry until brown on both sides.

Egg Salad

Boil 8 (or more) eggs. Dice. Add salt, mustard, mayo. Cool in the fridge before eating.

Ma Po Tofu

Cut tofu block into medium chunks. Fry finely diced garlic and ginger in sauce pan with safflower oil. Add a spoon or two of black bean paste. Fry longer. Add tofu, and some water so the tofu is half way covered in the mixture. Add some soy sauce, not much. Let it simmer for ten minutes so the tofu absorbs all favor.

Fried Rice

You only make this recipe if you have day old rice in the fridge. Do not use fresh rice.

Fry finely diced onion and carrot in a non stick pan with safflower oil. Fry two eggs. Fry the eggs in the same pan if you have room. Mix together with day old, cold rice. Make sure the rice is broken up well and don’t use too much oil. Season with soy sauce, white pepper, a sweet curry powder. Add salt to taste. Add a lot of green onions when done frying.

Szechuan Noodle

Boil half a pack of spaghetti or soba noodle until cooked. Also boil corn and green beans, but this won’t take as long as the noodle.

Heat 1/4 or 1/3 cup safflower oil in sauce pan. Pour the hot oil over a 1/2 tbl-spoon of ground red pepper flake and ground Szechuan pepper corns. Let the hot oil absorb the flavors for 10+ mins, then discard the dried peppers.

Add copious amounts of sliced green onions, minced garlic, and sesame seeds to the oil and let rest. Then season the mixture with soy sauce and black vinegar.

Combine spicy oil with the boiled veggies and noodles.

Can be served hot or cold.

Sesame Cold Noodle

Boil soba-like noodle until cooked and rinse with cold water.

Mix minced garlic, 2-3 tbl spoon sesame paste, tbl spoon nut butter, splash of boiling water. Season with mixture with soy sauce, salt, vinegar, splash of sesame oil, and maple butter.

You can use tahini paste instead of sesame paste, but you will need more salt to compensate.

Add cilantro if you like.

Garnish with sliced raw carrots and cucumbers.

Fermented tofu sauce noodles

Mix fermented tofu sauce with soy sauce and honey, then mix with cooked noodles. Garnish with julienne’d cucumbers.

Buddha Bowl

Quinoa, shelled edamame, diced tomato and cucumbers, carrots, and diced onion

nut sauce: mix peanut butter, nut butter, 1 tbsp maple syrup or honey, garlic, salt and walnut (or any nut oil).

Impossible burger/block stir fry

Fry diced onion in pan with neutral oil until soft. Add one impossible meat block, then brown it. Add two spoons of black bean or chili bean sauce. Season with white pepper and MSG. Add diced bell pepper and jalapeno. Add soy sauce if not salty. Serve over rice.

Halloumi Salad

Fry 3+ ears of corn (or two cans of corn) and one pack of halloumi in separate pans. Boil water and cook Israeli cous-cous.

Mix the fried corn, halloumi bits, and cous-cous in a container. Add raw diced onion, and a lot of sliced mint, basil, and parsley. Season with salt, black pepper, and olive oil.

Halloumi Burger

Fry a thick slice of halloumi and some squash/zucchini slices. Plate on toasted bun with basil leaves, pickled jalapenos, spicy mayo, black pepper.

Lemon Parsley Pasta

Boil half-pack of noodles in salted water. Separately fry garlic and sliced Thai chilies with a lot of oil. Mix drained noodles into fry pan. Then mix in a lot of sliced parsley and lemon juice. Season with Black pepper and salt. Serve with a lot of Parmesan and fried chicken tenders.

Side Dish

Fried Cabbage

Cut white cabbage into small pieces. Add lots of coarsely chopped garlic to a pan with neutral oil. Add sliced cabbage with add a splash of water with cabbage and cover with lid. Season with salt.

Air fried eggplant

Coat sliced eggplant with safflower oil and air fry. Mix the fried eggplant with chili oil, soy sauce, minced garlic, green onion, and lots of cilantro.

Steamed Egg

Mix \(x\) eggs with \(x \times 80\) mL water. Mix with MSG, salt, and soy sauce (just for color). Then put in the rice cooker and steam.

Veggie Roast

Pre-heat oven to 350.

In iron pan, mix broccoli, onion, and red pepper chunks with safflower oil. Then roast for 30 mins.

Season with lemon juice, salt, black pepper.

Snap Peas or Sugar Snap Peas

The technique is the same for both. Cut off the hard ends, and boil until halfway cooked. Mix with olive oil, salt, and pepper.

Carrot and Egg

Fry sliced carrots in safflower oil until the oil is very orange. Add three beaten eggs. Season with salt. Do NOT add black pepper.

Alternate Version

Use spinach instead of carrots, which is faster.

Sesame Sauce for hot pot

Hot water, sesame paste, salt, minced garlic

BBQ sauce for hot pot

Vegetarian BBQ Sauce, minced garlic, sesame oil, soy sauce

Impossible Lasagna

Vegetable Lasagna

Do not pre-cook lasagna noodles!

White Sauce

Mix cream or half and half with minced garlic or shallots. Add lots of Parmesan, salt, and pepper. If you used shallots instead of garlic, add garlic powder. Heat on medium-low.

Cheese Sauce

Mix ricotta cheese with either drained, frozen spinach or rehydrated mushrooms. Season with salt, pepper, and msg.

Construct the Lasagna

Layer 1: White sauce Layer 2: Noodle Layer 3: Cheese Sauce Layer 4: Sliced eggplant or squash

Alternate these layers 2 or 3 times. Then top it off with a final layer of shredded Parmesan cheese and sliced jalapenos.

Place in oven at 350-375 for 60-90 mins. Then hit it with broiler for a couple mins until the top is crispy.
